Carlos Fajardo is the technical business development manager for Palsgaard in New Jersey. He leads strategies and works closely with R&D to develop new applications and solutions in formulating baking products. Carlos received a Ph.D. from Oregon State University in Food Science focused on Food Chemistry for batter-based products such cakes. He has peer review publications in batter-based products. He is an active member if the AACC International and ASB.
